Arzak

Juan Mari Arzak and his daughter Elena are award-winning Spanish chefs at their famous family restaurant, Arzak in San Sebastian, Spain.

Juan’s grandfather José María, father Juan Ramón, and mother Francisca preceded the father-daughter duo in the restaurant business. Juan trained with a number of famous French chefs such as Bocuse, Troisgros, Senderens, Boyer, and Arrambide.

Not surprisingly, Elena’s love for cooking comes from her family. Elena went to hotel management school in Lucerne, Switzerland, then trained at top European restaurants Gagnaire, Bras, El Bulli, and Dutournier.

Juan and Elena have created many unique menu items at Arzak. A few favorites include crisp smoked potatoes fashioned into Yamamoto-style pleats with sizzling prawns concealed in the folds; lobster in a crispy potato shell with a Brazilian tree stem sauce and a red pepper sphere; monkfish with mussels and nori flavored shells, tempura seaweed, liqueur starfish and crunchy red pepper balls; and lemon dessert with honey mead.

For the past five years, Arzak has been on the World’s 50 Best Restaurants list. Arzak was also the first Basque restaurant to earn all three Michelin stars. In 2008, Juan Arzak received the Universal Basque award for modernizing Basque cuisine. Elena was recognized as the World’s Best Female Chef at the Veuve Clicquot World’s 50 Best Restaurant Awards.
